About The Chambers

The Chambers was born in 2018 by a local Cairns family. It all started around the dinner table (after a few wines) and a shared belief for cooking delicious food that heroes local produce that The Chambers was established.

Setting sights on a historical building in the heart of The Cairns City and with the help of the original builders (The Watkins Family), The Chambers underwent a two-year-long restoration process to expose the original history of the former 1920s’ bank.

With a mantra of ‘old meets new’ we at The Chambers stand by a set of principles that encourages us to constantly reinvent the wheel and use local suppliers with quality produce wherever possible.

Recently taking out the 2022 award for Best Cafe Dining, Best Breakfast & Best Casual Dining of The Year, The Chambers team is dedicated to providing guests with an experienced unlike any other. With each member having a passion for the industry, you can sit back, relax and know you will be looked after no matter the occasion, event, or function.

The Chambers menu has been designed and created by Head Chef Chris Jarvis. Taking out Chef of The Year at the 2021 Restaurant and Catering Awards for NQ and NT, Chris is constantly looking for ways to reinvent the wheel, inspire and keep up with the latest trends. Using local produce in all his dishes, Chris and his team work endlessly to plate dishes that aim to inspire and leave guests wanting more.

The Building

21 Spence St

Over 90 years old The Chambers building (formerly known as Earl Court) has hosted many offerings over the decades after its original purpose as a branch of the National Bank of Australasia in 1926.

Utilizing federation styled columns and arches, the building was designed by Brisbane’s Lange Powell in a joint venture with Mareeba architect Richard Hill. Construction efforts were a home grown affair thanks to the efforts of several local families, among them the Watkins whom documented the original build and generously donated the photos to The Chambers as part of the restoration.
